Bread baking for the Jubilee

I have been thinking about various recipes for the Jubilee, and have a few ideas up my sleeve. Really I was looking for recipes suitable to either place on a table for a street party but equally as well at home for a picnic, as well as any other time as part of a meal.

First of all I made dough using the dough setting on the bread maker. I  made three loaves, all from the same basic ingredients, which were

  • 1lb bread flour
  • 1.5 teaspoon salt
  • 1.5.teaspoon instant yeast
  • 1.5 teaspoon sugar
  • 320ml water

Loaf 1 - I used white flour to get a white bread, and added to it 2 tablespoons chopped dried onion soaked in water for 10 mins before draining and adding, and before baking topped with 3 slice cooked and cooled back bacon. 1 slice for each finished result. 

Loaf 2 - I used Kamut flour (as I prefer it to white)  added 4 oz grated cheese, and 1/2 teaspoon blue gel colouring.

Loaf 3 - I used the kamut flour again, and this time added 3 tablespoon tomato powder mixed with 6 tablespoons warm water, 4 sun dried tomatoes soaked for 2 hrs in oil then drained and chopped, and 1/2 teaspoon red gel food colouring. 




I liked this idea, as I wanted to use the red, white and blue theme, and these 3 loaves together give a nice balance of flavours between the bacon, cheese, tomato and bacon.



Next up I tried to think of a few less run of the mill ideas as they are for such a historic occasion. 


So I took my 3 loaves and split each into 3 pieces.  Each piece was knocked back and re - kneaded as per normal.

I decided for the first one to make a tear and share. I rolled out one piece of each colour to 6 by 11 inches and rolled up longways to give a piece 6 inches long. Before I rolled up the white one I topped with 1 slice of chopped bacon.I then cut each roll into 1 inch pieces and placed into a round baking tray and set aside to rise.

Secondly I decided to make a plait loaf. For this I rolled out to approx 16 by 8 inches, topped the white with bacon, and rolled them up swiss roll style again, then placed them on a baking tray, and plaited them.

Thirdly I decided to make a stripy loaf, and rolled out each remaining piece to the size of a loaf tin. Placed the bacon on top of the white before I added the blue. 2 minutes before the end of cooking time I topped the loaf with some grated cheese.

These loaves tasted so delicious, and the flavours compliment each other really well.

    1. very easy to make, well worth doing, feel free and copy. just remember the normal food colouring from the supermarkets wont give you the bright colouring, it needs to be a gel
